Carcass Contest
A Carcass Contest is open to all market steers, sheep, hogs, and goats who were officially weighed and exhibited in the 2010 Clarke County Fair 4-H and FFA youth livestock shows. In cooperation with the slaughter plants in the local area, carcass data will be collected from the steers, sheep, hogs, and goats by ultrasound prior to slaughter and after they have been sold and slaughtered. Final placings will be determined by carcass grade and yield. Only carcasses which grade a minimum of choice minus for beef, have a minimum back fat of .10 for sheep, have a minimum back fat of .5 for swine, or grade a minimum of choice minus for goats will be considered for the placings in this contest.
The Grand Champion and Reserve Grand Champion winner in each of the 4 species will receive a plaque which will be given out in September or October at the Carcass Contest Results meeting.
